Kefir Jam Muffins

- 2 1⁄4 cups all-purpose flour
- 1⁄2 cup packed light brown sugar
- 1⁄4 cup sugar
- 2 teaspoons baking powder
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon salt
- 1 cup kefir or 1 cup buttermilk
- 1⁄3 cup canola oil or 1/3 cup vegetable oil
- 1⁄3 cup applesauce
- 1 large egg
- jam or jelly
directions
- Preheat oven to 400 degrees. LIne muffin pan cups with paper liners.
- In bowl of stand mixer mix all dry ingredients until there are no more clumps of brown sugar.
- In separate bowl, mix kefir, oil, applesauce and egg.
- Add liquid mixture to flour mixture and mix just until the batter comes together. (At this point, you can refrigerate the batter for up to a week).
- Using 1/4 measuring cup or ice cream scoop fill muffin cups 2/3 full. If making jam muffins add 1 teaspoon of jam to each muffin and lightly press into the center of each muffin cup.
- Bake for 20-25 minutes or until muffins are set and golden on top.

My screen name is a diminutive in Lithuanian for bread, so you won't be suprised to learn that I love to bake bread. In recent years I have been baking a lot of sourdough breads and have several starters sitting in my refrigerator. But I like to cook a lot of other things, as well, especially from various cultures. The cat wishes I would concentrate on meat and fish... I joined a few years ago but started posting recipes and participating in forums just recently - I wish I had done so earlier.
