Kat's Mom's Family Oatmeal Cookies

ingredients
- 3 cups flour
- 2 teaspoons salt
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 2 cups white sugar
- 2 cups brown sugar
- 2 cups shortening
- 4 cups oatmeal (uncooked)
- 5 eggs
- 5 teaspoons vanilla extract
directions
- Sift flour, soda, baking powder, salt & white sugar together.
- Add brown sugar and softened shortening, blend until crumbly.
- Stir in oatmeal.
- You can store this mix in a covered container in the refrigerator for up to two weeks.
- When ready to bake, stir 1 egg and 1 teaspoon of vanilla extract into 2 cups of mix.
- If desired, add any chips, nuts, etc.
- Put mix (2 tablespoons per cookie or one level ice cream scoop-full - see picture) on a lightly greased cookie sheet and bake 12-15 minutes in a 350 degree oven until lightly browned.
- Let cool on wire rack.

These are great tasting oatmeal cookies! I ended up with about 45 4-inch cookies. I increased the cook time to 15 minutes and could fit about 6 per cookie sheet while baking. In half the batch I used butterscotch chips and the other had Craisins (sweetened dried cranberries). Both additions were great. Thanks for posting the recipe Kat's Mom!!
