ingredients
- 4 garlic cloves, minced
- 4 lbs ground beef
- 1 cup green bell pepper, chunked
- 1 cup Kahlua
- 1⁄2 cup fresh parsley, chopped
- 6 tablespoons chili powder
- 2 tablespoons tomato paste
- 4 teaspoons salt
- 2 teaspoons cayenne
- 2 teaspoons cumin powder
- 2 teaspoons dried marjoram, crushed
- 2 teaspoons dried oregano, crushed
- cheddar cheese, grated
- 1 large onion, chopped
- spaghetti, cooked
directions
- In large pot, heat oil.
- Add onions and garlic; saute until transparent.
- Add meat; brown.
- Add remaining ingredients except cheese and onions; mix well.
- Bring to boil.
- Reduce heat and simmer, partially covered, for 45 minutes.
- To serve, spoon chili on top of cooked, drained spaghetti in individual bowls and top with cheese and onions.

This is a great recipe for chile. Over thirty years ago, we obtained this same recipe when we purchased a bottle of Kalua from our local liquor store and Kalua had just published a recipe booklet with multiple Kalua uses. The original version included 2 cans of kidney beans. We also sometimes substitute 1/2 the meat with sausage burger for an even sweeter flavor.

This is good, and it's even better when it sits overnight. The contrast of the sweet coffee against the heat and savory seasonings....yum. I only used 3 lbs. of burger, and it was still too stiff to simmer for 45 min w/o adding water. I used 1/2 cup, and it worked well. I also cut the salt down to 2.5 tsp. I couldn't make it too spicy due to husband, so I cut the cayenne down to 1 tsp, added 1 tsp. ancho chili powder and then used chipotle tabasco sauce on mine for the heat. The tabasco sauce made it very good. One problem: was that some onions are sautee'd in step 2; however, the recipe doesn't say how many. I used only 1 large onion, and I'm not sure it was enough.
