Jerk Turkey Slow Cooker Soup from Weight Watchers

- 1⁄4 teaspoon ground allspice
- 1⁄4 teaspoon cayenne pepper
- 1⁄2 teaspoon ground ginger
- 1⁄2 teaspoon garlic salt
- 1⁄2 teaspoon black pepper, divided
- 1 lb skinless boneless turkey breast, cut in 1-inch chunks
- 1 medium garlic clove, minced
- 1 medium onion, chopped
- 14 1⁄2 ounces fire-roasted diced tomatoes with green chilies, undrained
- 15 ounces canned black beans, drained and rinsed
- 2 cups canned chicken broth
- 1⁄2 teaspoon table salt
- 1 tablespoon fresh lime juice
- 2 tablespoons fresh cilantro, minced
directions
- Combine allspice, cayenne, ginger, garlic salt and 1/4 teaspoon of black pepper in a medium bowl.
- Add turkey and toss to coat; set aside for 15 minutes.
- Place turkey in a 5-quart slow cooker; add any spices remaining in bowl. Add garlic, onion, tomatoes, beans, broth, salt and remaining 1/4 teaspoon of pepper; stir.
- Cover and cook on LOW setting for 6 to 7 hours.
- Stir in lime juice and cilantro; let sit for 5 minutes for flavors to blend.
- Yields about 1 1/2 cups per serving.

I made this soup 2 days after Thanksgiving. Yesterday I made stock out of a turkey carcass and tonight made this soup from the left over meat. This is CRAZY good! I doubled the recipe and added an additional 2 cups of stock. I cooked it on the stove top for about 2 hours. These minor changes are all that I made and it turned out great! Thanks Ally for posting.

Excellent soup. I did not make this in the crock pot, but on top of the stove using precooked turkey (I used one large turkey thigh simmered and removed from the bone). I also added one cup of frozen corn for some color (just a personal preference). Also, like one of the other reviewers, I missed the lime juice and cilantro. Can't wait to try the leftovers with the cilantro and lime ~ will make a great soup even better. Thanks for posting this Ally! Made for Zaar Chef Alphabet Soup.

Yummy! I couldn't find turkey so I used boneless skinless chicken and I had some left over corn on the cob that I cut off the cob and threw into the soup. My husband and I really enjoyed it. I forgot the cilantro annd lime until I reread the recipe today but it was still fantastic. I even had leftovers for lunch today. Mmmmm.

Great soup! I used leftover turkey from Thanksgiving and cooked it on the stovetop. I doubled the recipe, and used a mix of homemade turkey stock & water until I got a more broth-based soup. My husband doesn't like super-spicy foods, so I used one can of tomatoes with mild chiles, and one can of plain diced tomatoes. Very tasty, and very South-Beach friendly!

Really liked this, it was pretty spicy but DH and I both love that. Then to have something so simple for only 3 points what's not to like. I used chicken breast instead of turkey as that's what we could find at our small local store and increased the point value some because we thickened it a little with flour and served over white rice. Made a complete meal that we really enjoyed after a day working outside in this cool fall weather. Thanks Ally, we really enjoyed this.

Very good! I was recently diagnosed diabetic, so this fit into my meal plan , with a few minor changes. I also must watch sodium levels, so I used garlic powder instead of salt, and I pre-cooked dried beans (an eight-bean mix). I also used low sodium canned diced tomatoes and a small can of green chilis.
