- 6 -8 corn tortillas, stale and torn in pieces
- 1⁄4 - 1⁄3 cup olive oil (I use the least amount possible)
- 7 3⁄4 ounces el pato tomato sauce (yellow can with duck, can use more if needed)
- 1⁄3 - 1⁄2 cup chihuahua cheese, grated (or queso blanco)
- 1⁄2 red onion, sliced thin
- 1⁄4 cup cilantro, chopped

- Heat olive oil in large skillet. Oil is ready when small piece of tortilla thrown in bubbles. Fry tortillas in batches, until crisp and golden. Remove and drain on paper towels. Drain oil, reserving enough to leave a nice residue in pan.
- Add tomato sauce to pan and stir over medium heat until warm. Add tortillas and stir together until warm. Add salt to your liking. Top with cheese. Take off heat. Once cheese melts, add onions, then top with cilantro. Serve with eggs, refried beans, breakfast potatoes, whatever you like.

This was very tasty! I have never had or made anything like this before and I am going to be making it again. My dh and kids loved this (so did I) :) I left off the red onion because I didn't have one and added some onion powder and it still tasted good. Easy to make and super yummy! Thanks for the great recipe Jen!

I'm married to the love of my life and my high school sweetheart. (Corny, but true..)We have 4 children and everyday is an adventure, for sure. My love for cooking came from my childhood. My grandma made the best huge southern meals without any recipes at all, most of her ingredients coming from her garden. I loved watching her cook. Organic foods are a must and I try to add them to whatever I make for my family. I enjoy going to our local farmers market and making something out of what I've found that day.
