Jalapeno Tequila Gimlet

  • 2 jalapenos
  • 2 cups white tequila
  • 1 cup fresh lime juice (about 16 limes)
  • 12 cup agave nectar

  • Roast jalapenos over gas flame or under broiler until soft and charred. Stem and chop chiles.
  • Place chiles and seeds into a jar. Add tequila and let sit 1 hour. Strain through fine mesh sieve and discard solids.
  • Stir in lime juice, agave nectar and 2 cups ice.
  • Let stand, stirring occasionally, until ice is melted.
  • Divide among 8 chilled gimlet glasses.
