- 1 tablespoon oil
- 1 onion, chopped
- 1 cup green pepper, chopped
- 2 garlic cloves, minced
- 1 tablespoon jalapeno, finely chopped
- 2 lbs lean ground beef
- 2 large eggs, beaten
- 1 tablespoon flour
- 3⁄4 teaspoon salt
- 1⁄4 teaspoon pepper
- 4 slices bacon
- 1⁄2 cup ketchup
- 1⁄4 cup brown sugar
- 4 tablespoons white vinegar
directions
- Preheat oven to 350 degrees.
- Saute onion, green pepper, garlic, and jalapeños in the oil.
- Add the sauted vegetables to hamburger, eggs,flour, salt and pepper. Mix well, I use my hands.
- put in a baking dish or on a cookie sheet lined with aluminum foil.
- drape with bacon.
- combine ketchup, brown sugar, and vinegar. cover the meatloaf.
- Bake uncovered for 1 1/2 hours . Let stand for 10 minutes.

Made for Spring PAC 2011 and we loved it! I did add the flour but I don't think you really needed it and I cut down on the brown sugar just a little. The jalapenos that I had really weren't too spicey just enough. Definately a keeper and going into my Favorites for 2011. Thank you for submitting the recipe.
