- 1 egg yolk
- 1 cup safflower oil

- Heat a grill to high heat. Grill the jalapenos on both sides.
- Whisk together the vinegar and egg yolk in a bowl. Pour in the oil, whisking constantly, until emulsified.
- Blend the grilled jalapenos with the mayo.
