  • 1 tablespoon white vinegar
  • 1 egg yolk
  • 1 cup safflower oil

  • Heat a grill to high heat. Grill the jalapenos on both sides.
  • Whisk together the vinegar and egg yolk in a bowl. Pour in the oil, whisking constantly, until emulsified.
  • Blend the grilled jalapenos with the mayo.
