This pie makes a lovely light supper dish. It takes very little time to put together and bake. Serve it with your favorite salad. This recipe is adapted from a cookbook by The Sons of Italy Florida Foundation.

- 1 pie shell, unbaked
- 3⁄4 lb Italian sausage, sweet
- 1⁄2 cup onion, chopped
- 3 eggs, beaten
- 1⁄2 cup cream or 1/2 cup milk
- 1 cup mozzarella cheese, shredded
- salt & pepper, to taste
directions
- Place pie shell in oven during the pre-heating time for about 5- 10 minutes in order to firm the bottom some.
- Don't overcook!
- Remove casing from the sausage and crumble.
- Sauté sausage and onions; drain well and spoon into prepared pie shell.
- Blend eggs, milk, cheese, salt and pepper; pour over sausage mixture.
- Bake at 350 degrees F. for 35 minutes, or until custard sets and tests clean with a knife.
- Allow to cool slightly.
- Cut into 8 wedges and serve.

That was wonderful!! Used spicy Italian just because we like it better, threw some cracked red chilis in and some Italian spices. I had cooked the filling the day before, so Monday dinner took merely minutes to prepare. I had cut it down to two eggs (because I hate eggs) but I won't do that again...rather, I'll bulk it up with more veggies (mushrooms, sweet bell peppers) and toss a quarter teaspoon of baking powder in with the egg/cheese mix - it seems to make it puff up and brown a little more, just makes it prettier. If I add more yummy stuff, it'll mask the egg taste ;-) Husband and one son really liked it, the other son doesn't like anything outside of big macs and gummy bears, so HIS opinion never counts. Thank you!

Wow this is a great dish! Only made a couple of modifications.. When frying the sausage and onions, I added minced garlic and some dried Italian seasoning. Used half cream and half whole milk. And used a deep dish 9 inch pieces shell..took some other suggestions to heart as well. I also had a bit of dry sherry I added for extra flavor..for my 1st quiche, this was easy and delicious!
