Italian Sausage Dinner Bake

"I first tasted this delightfull homestyle casserole at a potluck supper 20 years ago. I hunted down the cook, but she made this without a recipe. Here is my version, in recipe form."

• Serves: 6

ingredients

• 1 1⁄2 lbs Italian sausage, cut into 1 1/2 inch pieces
• 1 large onion, sliced
• 3 carrots, sliced
• 3 baking potatoes, peeled and cut into chunks
• 1 (28 ounce) can diced tomatoes
• salt and pepper

directions

1. Preheat oven to 350°F.
2. Combine ingredients in a large oven proof casserole.
3. Cover with foil and bake 1 1/2 hours.

This was good, but I probably would not make it again. I cooked it for two hours because I like my potatoes well done. This seemed more like a soup than what I expected.

This turned out well and good, the family was pleased. It is also simple enough to exchange some of the ingredients as I had to do. Irish Garlic Sausage and an added amount of mild salsa for a kick. The cooking time was right on as the potatoes came out with just a smidge of stiffness.

I made this and thought it was delish! I will definitely be making this dish again. I did make a few additions, no changes though to the actual recipe. I added 4 cloves minced garlic, sliced mushrooms, and mozzarella cheese on the top at the last 15 minutes of cooking. The potatoes were PERFECT at 90 minutes and it wasn't soupy or anything....just perfect! I can't wait to play around more with this. You could almost turn it into an Italian Shepperd's Pie. Another reason I really liked this was everything was already in my pantry...everyday ingredients which make this a super easy meal to throw together fast. Thanks for this great recipe!
