  • Toss potatoes with oil and add to skillet on med heat.
  • When potatoes are cooked about halfway through, add onions and olives, cook until potatoes are cooked through and onions start to caramalize.
  • Season with salt and pepper.

    Great recipe - I did it in the oven instead of stove top. Sprayed the potatoes with no oil put them in a 375F oven and after 25 minutes added the onions & olives continued to bake for anothe 15 minutes . We loved them, Thanks for posting Miss Erin

    I have roasted potatoes with these ingredients plus garlic, and the combination is very tasty. My potato wedges varied in size, so had a few crunchy pieces. I think I prefer roasted, the flavors all infuse more intensely. Thanks, Miss Erin.
