Italian Pepper, Potatoes and Eggs

- 2 -3 white potatoes, chopped in small pieces
- 2 green peppers, chopped in pieces
- 1 onion, diced
- 2 eggs, beaten
- salt and pepper
- 1⁄8 teaspoon sugar
- canola oil
directions
- In a large frying pan, cook white potatoes and green peppers in oil until tender adding salt, pepper and sugar.
- When vegetables are tender, add the 2 beaten eggs and stir until egg is cooked. Serve with hot sauce on the side if desired.

This is such an easy and super yummy recipe! I made it for dinner tonight and everyone just luved it. It has a really nice texture and the taste its scrumptious. I especially like the idea of adding in peppers. They make the whole thing special. I used mixed bell peppers since thats what I had on hand, added in some dill and left out the sugar and hot sauce. But other than that I followed the recipe exactly and it was just right. Thanks so much for sharing this keeper of a recipe with us, Irish Rose.
