  • Heat oil in large pan over med-high heat
  • Saute eggplant, pepper, onion until soft.
  • Stir in garlic, cook 1 minute.
  • Stir in buffalo, cook until almost done.
  • Stir in tomatoes and seasonings and cook until meat is done.
  • Spoon into bowls and sprinkle parm on top.
