Italian Dressing Meatloaf

- 2 lbs lean ground beef
- 1 small onion, chopped
- 1 medium green bell pepper, chopped
- 12 saltine crackers, crushed
- 1 egg
- 16 ounces tomato sauce
- 1 ounce Italian salad dressing mix (I like Good Seasons)
- 1 tablespoon brown sugar, packed
- 2 teaspoons prepared mustard
- 2 teaspoons celery seeds
- 2 garlic cloves, minced
- salt and pepper
directions
- Preheat over 400 degrees.
- Combine tomato sauce, brown sugar and mustard in a small sauce pan. Add salt and pepper to taste and simmer on low while preparing meatloaf.
- Combine ground meat with Italian dressing mix, salt, pepper, garlic and celery seed until mixed thoroughly.
- Add crackers and eggs and form into a loaf.
- Place meatloaf on a a greased baking sheet and cook 25-30 minutes. Top with 1/2 of the tomato sauce mixture and cook an additional 10-15 minutes.
- Use the remaining tomato sauce to top the meatloaf slices when done.
- Best served with mashed potatoes and green beans. Enjoy!

This is a tasty meatloaf! Made this as written except for two things: I like to use a meatloaf mix (beef, pork, veal) instead of plain ground beef, and I had some already chopped green, yellow and red peppers so I used those instead of just green pepper. I did cook it for a full hour as it didn't seem done enough in the middle, but that might of been because my loaf was pretty thick in the middle. The sauce is good; next time I'll put less on it while cooking so there is more to pour on the slices! Made for Fall '09 PAC
