  • Oven 375 degrees or Mark 5.
  • Grease patty tins.
  • Roll out pastry thinly on a lightly floured surface, cut into rounds and place in prepared patty tins. Prick bottom of each with a fork.
  • In a bowl, beat eggs and sugar until the mixture is thick and frothy.
  • Melt butter in a pan until just liquid, add the ground rice and nutmeg, lastly the egg and sugar mixture.
  • Mix well together and half-fill each patty shell with the mixture.
  • Place half a cherry on each pie and bake for about 15 minutes or until golden brown.
  • Turn out on to a wire rack and leave to cool.
  • These pies keep well.
