Island Rice

"We like to eat this rice when we are having a "tropical" meal. This recipe comes from "Burt Wolf's Menu Cookbook". I usually just put all the ingredients in my rice cooker and just add a little extra water but it can be cooked on the stove as described below."

Very good rice - I love the addition of lime. I made this with Recipe #222225 and Recipe #362340 for ZWT5 Jammin Java Jivers. Thanks!

This rice was really nice! I made this in my rice cooker and I doubled the recipe, following the liquid:rice ratio for my rice cooker instead just to make sure it would work. I didn't use lime zest and substituted garlic powder for the fresh garlic since my garlic press was in the dishwasher at the time ;) I served with beef chimichangas, homemade salsa and guacamole... yum! DH loved it too (but he put ketchup on it! ha ha, strange, I know!). Made for ZWT5.

This was a lovely rice dish! Made as directed except that I added 2 cloves of garlic. Very flavourful with no one ingredient overpowering. Will definately make this again! Made for ZWT5 - Ali Baba's Babes.

I stirred in the lime zest just before serving the rice. This was good with chicken. I also subbed basmati rice for plain white rice. Bright and refreshing taste! Reviewed for ZWT 2009.

<p>I live in sunny Southern California with my husband Jim, son William, and our Golden Retrievers Max and Marley. My profession as a school teacher allows me to enjoy my summers at home with my family and do what I like best, cook! We live in a great neighborhood where parties or barbeques are not uncommon. Brewing beer is also a neighborhood activity that brings us all together. Both my husband and I come from families that love to cook. I am looking forward to learning more about the Recipezaar Community! <br /><a href=http://s304.photobucket.com/albums/nn175/allisonslattery/?action=view?t=HPIM3291.jpg target=_blank><img src=http://i304.photobucket.com/albums/nn175/allisonslattery/HPIM3291.jpg border=0 alt=Photobucket /></a> <br /><img src=http://i3.photobucket.com/albums/y53/DUCHESS13/Zaar%20World%20Tour%204/ZWTAB-tg.gif alt= /> <br /><img src=http://i23.photobucket.com/albums/b399/susied214/permanent%20collection/PAC08Main.jpg alt= /> <br /><img src=http://i23.photobucket.com/albums/b399/susied214/permanent%20collection/adoptedspring08.jpg alt= /> <br /><img src=http://i23.photobucket.com/albums/b399/susied214/permanent%20collection/PACfall08partic.jpg border=0 alt=Photobucket /> <br /><img src=http://i23.photobucket.com/albums/b399/susied214/permanent%20collection/IWasAdoptedfall08.jpg border=0 alt=Photobucket /></p>
