Inside-Out Stuffed Green Bell Peppers

ingredients
- 1 lb ground beef
- 1⁄2 cup chopped onion
- 1 (16 ounce) can stewed tomatoes, cut up
- 1 large green pepper, chopped (or several green peppers, suite your own taste)
- 1⁄2 cup uncooked long grain rice
- 1⁄2 cup water
- 2 teaspoons Worcestershire sauce
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon pepper
- 4 ounces shredded cheese (or more to suite your taste)
directions
- In a skillet, brown beef. Drain.
- Transfer to a greased 2-quart casserole dish.
- Add the next 8 ingredients.
- Cover and bake at 350°F for 1 hour or until rice is tender.
- Uncover and sprinkle with the cheese.
- Return to the oven until cheese melts, about 5 minutes.

Made this in the crockpot as others suggested. (2 hrs on high, then I stirred the cheese in just before serving). I cooked 1 cup of rice according to package instructions before adding it. I also added 14 oz. tomato sauce and sprinkled on a little dried crushed red pepper. I used fresh tomatoes instead of canned. The end result was more like a stew but everyone loved it!

This is SOOOO good! I did make a few changes. 1) instead of stewed tomatoes, I used FIRE ROASTED diced tomatoes 2) For the rice, I used the Ben's Spanish Rice that you microwave in a packet for 90 seconds 3) I added a can of tomato sauce, and used chicken broth instead of water because I had some leftover from dinner last night. I also mixed everything up in a seperate bowl and just dumped it all in. Only took about 30 mins in the oven because the rice was pre cooked. Oh, :) and added some cumin and garlic powder to the ground beef. Thanks so much! I will be sending this recipe to my mom.
