  • In a skillet, brown beef. Drain.
  • Transfer to a greased 2-quart casserole dish.
  • Add the next 8 ingredients.
  • Cover and bake at 350°F for 1 hour or until rice is tender.
  • Uncover and sprinkle with the cheese.
  • Return to the oven until cheese melts, about 5 minutes.

  1. We love this recipe. I use diced tomatoes and tomato sauce instead of the stewed tomatoes and water. I have also use brown minute rice in place of the long grain rice. I see other ideas posted that I may also try. So easy and taste great!!
     
  2. Oh....my....God! This stuff is great. I used a box of Zatarain's Black Beans and Rice instead of the plain rice and wow....it's a keeper! Also, I sauted the onions in butter and paprika before adding the ground beef. I will never make it in the traditional style again. Thank you taillights!
     
  3. This turned out great, but feel it wouldn't have been as good if I didn't do some modifications. Based on other reviews, I added a clove of minced garlic and subbed a can of Rotel hot tomatoes instead of stewed tomatoes and water. We served this in tortillas and loved it!
     
  4. very yummy! i added extra green pepper and used a can of diced tomatoes instead of stewed.
     
  5. Made this in the crockpot as others suggested. (2 hrs on high, then I stirred the cheese in just before serving). I cooked 1 cup of rice according to package instructions before adding it. I also added 14 oz. tomato sauce and sprinkled on a little dried crushed red pepper. I used fresh tomatoes instead of canned. The end result was more like a stew but everyone loved it!

  1. We double it mix it all up we use red and yellow peppers and organic fire roasted diced tomatoes one can has medium green chillies, undrained.

  3. My rice took an hour longer to cook than the recipe said, so next time I'll put the rice on top of the beef and then put the tomatoes and everything else on top of the rice. I used diced tomatoes with chilis instead of stewed tomatoes.
     
  4. This is SOOOO good! I did make a few changes. 1) instead of stewed tomatoes, I used FIRE ROASTED diced tomatoes 2) For the rice, I used the Ben's Spanish Rice that you microwave in a packet for 90 seconds 3) I added a can of tomato sauce, and used chicken broth instead of water because I had some leftover from dinner last night. I also mixed everything up in a seperate bowl and just dumped it all in. Only took about 30 mins in the oven because the rice was pre cooked. Oh, :) and added some cumin and garlic powder to the ground beef. Thanks so much! I will be sending this recipe to my mom.
