ingredients
- 2 cups dry lentils
- 2 tablespoons olive oil
- 3 garlic cloves (sliced)
- 1 onion (diced)
- 1 tablespoon ketchup
- 1 (13 ounce) can unsweetened coconut milk
- 1 tablespoon ground coriander
- 2 teaspoons ground cumin
- 1⁄2 teaspoon chili powder
- 2 teaspoons turmeric
- 1 1⁄2 teaspoons garam masala
directions
- Cook lentils in 4 cups water until tender. 15-25 minute Meanwhile saute the garlic and onion in the oil. Transfer to a medium sized bowl and add the rest of the ingredients and stir very well.
- Once lentils are soft, combine the onion mixture with the lentils in a slow cooker and cook over low heat for at least two hours.

very tasty! i can't comment on how these work in the slow cooker, though. i cooked the lentils until they were el dente & when the sauce ingredients were bubbly, i drained them & added them to the sauce. they simmered on low about 15 minutes while I made salad. they came out perfect! made for veggie swap 7/11. thank you!
