Impossibly Easy Pizza Pie

ingredients
- 1 medium onion, chopped (1/2 cup)
- 1⁄3 cup parmesan cheese, grated
- 1⁄2 cup Bisquick
- 1 cup milk
- 2 eggs
- 8 ounces pizza sauce
- 1⁄4 cup chopped green pepper
- 1⁄4 cup chopped red pepper
- 3⁄4 - 1 cup mozzarella cheese, grated
directions
- Heat oven to 400 degrees.
- Spray a 9 inch pie pan with cooking spray.
- Sprinkle onion and parmesan cheese in bottom of pie pan.
- Stir bisquick, milk and eggs til blended.
- Pour into pie pan.
- Bake 20 minutes.
- Spread with pizza sauce and top with remaining ingredients.
- Bake 10 to 15 minutes until cheese is light brown.
- Cool five minutes before serving.

I had a similar problem to another poster. I ended up cooking the crust for an extra 10 minutes and at 425. I threw on the toppings and cooked for another 20 minutes and the crust was still a soggy mess. I cooked leftover soup for dinner that night and threw this pizza in the fridge. The next day, I reheated for an hour at 350 degrees and the crust was still soggy and gross. The only thing I did different was that I increased the crust batter by 50% (used 3/4 cup bisquick, 3 eggs and 1.5 cup milk) and put it into a larger pan so that I could feed 3. Maybe that was my mistake, but next time I think I'll just pull out my bread machine and make a proper pizza dough.

My boyfriend and I made this for dinner this weekend, and it was so good -- and easy! We skipped the peppers, used a little less onion, added ground spicy Italian sausage to the bottom, and used the low-fat Bisquick. When it was time to add cheese, we used low-fat shredded mozzarella, put some turkey pepperoni on it, and then added Italian seasoning, oregano, basil, red pepper flakes, and ground black pepper. It was so good. The only bad part was there were no leftovers by the time we got up from the table!

I am a wife, Mother and Grandmother. I am a native Texan and can't imagine living anywhere else. My Grandmother taught me to cook before I could see the top of the counter. I remember standing on a stool in her kitchen learning to make pancakes. My Mother loved to cook and it seems she was cooking (or cleaning) most of the time. So those are the two ladies responsible for nurturing my love of cooking!

As you can see I cook and review recipes more than I post them. That's because I am a pinch of this and a dollop of that cook and it's hard to put those recipes down on paper.
