  • Combine the flour, baking powder and salt in a bowl.
  • Beat together the butter, sugar and eggs in a large bowl until well blended. Stir in lemon rind and juice. Stir in flour mixture until the dough is smooth. Wrap dough in plastic wrap Refrigerate several hours or overnight.
  • Divide dough in half. Roll out each half of dough on a lightly floured surface to 1/8-inch thickness. Cut out using your favourite 3- or 4-inch cookie cutters. Place .5 inch apart on ungreased cookie sheets.
  • Bake in preheated hot oven (400 degrees) for 6 minutes or until lightly golden. Remove cookies to wire racks to cool.
