Huevos Chorizo

ingredients
- 8 ounces chorizo sausage (mexican style)
- 2 cups frozen diced potatoes
- 1 onion, chopped
- 8 eggs
- 8 flour tortillas
- 8 ounces cheese, shredded (cheddar or jack)
- salsa, to taste
directions
- Remove the chorizo from the casing, break up and fry until crumbly. Remove with a slotted spoon, and set aside. Drain all of the grease except two tablespoons. Add the onions and potatos and fry until the onions are soft and the potatoes are slighty browned. add the chorizo back in the skillet along with the eggs and scramble until the eggs are set. Serve with tortillas and top with cheese and salsa.

Very easy, and very good - love the flavors that come from the chorizo sausage. The only thing I did differant was cut the amount in half for my small family and leave out the potatoes (it's a calorie thing and not a taste) this was DIL's first time having chorizo and I think with this recipe she's now a convert. Me, I loved the ease of putting it together. Made for ZWT8 the Mexico leg

When I saw the reviews and photo for this recipe that my two teammates in Diners, Winers, and Chives posted, I knew that I just had to make this. I usually have all these ingredients on hand. This is one of those recipes that you don't really need to measure out the quantities, just use the amounts that seem right to you, which I did. Made with the listed ingredients and this was so awesome that I forgot to add the sour cream and cilantro garnish! Thanks, AlaskaPam, for a wonderful and practical Mexican region breakfast!
