ingredients
- 1 cup cornmeal
- 2 tablespoons flour, heaping
- 1⁄2 teaspoon salt
- 3 cups boiling water
- 1 cup oil, for frying
directions
- Heat water to boiling. Mix dry ingredients, add hot water a little at a time and stir until batter is the consistency of mud.
- Take 1 1/2 tablespoons of mixture and shape and press until it is a patty. Fry in hot oil (not too hot) until done. Test one before you take them all out of the oil. It should be crispy outside and chewy inside.

This is the recipe I've been searching for. I had a recipe years ago and just couldn't find the one that matched how good it was. Thank you so much for posting. The only thing I did differently was add a tablespoon of sugar. And I also dip my hands in cold water before shaping the patties. It also keeps the cornmeal mixture from sticking to your hands.as your making the patties. A slight indentation of my fingers left in the pattie was a good indicator of having the patties st the right consistency to fry.
