  1. I made this for lunch today and it was great! I left out the celery because the hubs wanted me to, but otherwise I made it as directed. I think velveeta is key here, it wouldn't have been nearly as creamy and smooth with another kind of shredded cheese, in my opinion. Oh, and I had a white sub sandwich roll that I got day old at a sandwich shop. I cut it up into four sandwiches and filled them with the cold mixture. I wrapped each one in aluminum foil and baked as directed. I will definitely be making this again...and again...and again. It's a nice, simple, light meal. Made for PAC 2008!

This year I will be celebrating five years of marriage with my wonderful husband. We have been blessed with a little girl, Adria, who turned one this past summer. I am lucky enough to be able to stay at home with her, so my dreams of being barefoot, pregnant, and in the kitchen have come true!! While Adria is the only one right now, we are hoping for a large family! We live in Springfield, MO but originally grew up in a little town of 200 in Illinois. Over the last few years, I have come to love cooking! Although, I'm by far no expert, I do try! My mother and grandmother have been pretty influential in that! In what little free time I have, I love to scrapbook, read, walk, and travel with my family! In fact, we are planning a trip to NYC very soon.
