- 1⁄2 cup walnuts
- 1⁄2 cup sugar
- 2 cups oil
- 1 lb jumbo shrimp, peeled and deveined
- 1⁄2 cup cornstarch
- 3 egg whites
- 1⁄4 cup honey
- 3 tablespoons mayonnaise
- 1 tablespoon lemon juice or 1 tablespoon white vinegar
- 1 tablespoon sweetened condensed milk
- 1⁄2 head shredded cabbage
directions
- Boil walnuts in 5 cups water for 10 minutes; drain.
- Place walnuts and 1/2 cup sugar into 2 pints of boiling water. Boil for another 10 minutes.
- Remove walnuts from water and coat with honey.
- Heat 2 cups oil until almost smoking, then fry walnuts until they are shiny and brown, about 5-8 minutes.
- Remove and place on cookie sheet to cool.
- Mix cornstarch and egg whites together to form a thick, sticky mixture. Mix shrimp into this mixture and set aside.
- Mix mayonnaise, lemon juice and condensed milk in a medium bowl until smooth.
- Heat 1/2 cup oil and deep fry shrimp until golden. (Put only a few in at a time or they will stick together).
- Drain shrimp and then fold into mayonnaise sauce.
- Serve over the cabbage the sauce is great with it.

There were GREAT!!! DH and I loved getting this from a chinese restaurant in California and this tasted almost exactly like the real thing! I didn't bother frying the walnuts either - I just sauteed in a little butter with sugar and then drizzled in honey. I did think the mayo taste in the sauce was a tad strong so I ended up adding more condensed milk. Next time I will use equal amounts mayonnaise and condensed milk. I'm so happy to find this recipe!!!!

This is such a great recipe... so simple yet so tasty. As good or better than what we order at the restaurant. And the sauce is perfect with just the 3 ingredients. (I candied the nuts the way I usually do - melt sugar in a pan, add nuts, stir until coated then turn out onto a piece of buttered foil.) Thank you for sharing! Note: I just noticed that I made it a little differently. (Not on purpose, just in a rush.) I didn’t add lemon to the sauce and I didn’t toss the prawns in the sauce. I added the honey to the sauce and drizzled it over the prawns, then topped it all with the candied nuts and served it with steamed rice.
