  • Heat oven to 400°F.
  • Combine rhubarb, OJ, honey and sugar in a pie dish.
  • Roast for 1 hour, until rhubarb collapses and OJ is reduced.
  • Cool 15 minutes, then stir in vanilla and serve or store.
