Honey Paloma Cocktail

- 2 ounces grapefruit juice, fresh squeezed
- 1 tablespoon fresh lime juice
- 2 teaspoons honey syrup (recipe follows)
- 2 ounces silver tequila
- 2 ounces club soda
- 1 tablespoon coarse salt

For the honey syrup
- 1⁄4 cup water
- 1⁄4 cup honey

For the honey syrup:
- In a small sauce pot combine water and honey. Set over medium heat. Stir until honey dissolves into water. Remove from heat and allow to cool to room temperature.

For the cocktail:
- Place salt on a small plate. Moisten the rim of serving glass with grapefruit rind. Twist glass around to thoroughly salt the rim. Fill serving glass 2/3 full with ice.
- Combine grapefruit juice, lime juice, honey syrup, tequila and club soda in a shaker or other vessel.
- Pour into glass. Add more ice if necessary. Garnish with grapefruit wedge.

Wow, yummm. I took a sip before I poured it into the glass and thought, wow, that is strong and sour. But after I took a big gulp with the ice and salt, it all blended together perfectly creating the most amazing flavor. I loved it. Thank you so much for sharing another wonderful recipe Potpie. It's the first time I've tried one of these but it won't be the last. Made for Seaside Brasserie - 2020.
