Honey Moist Cornbread

Tender and moist cornbread. Great served with butter. From Land-O-Lakes cookbook.

ingredients
- 1 cup all-purpose flour
- 1 cup yellow cornmeal
- 1⁄4 cup sugar
- 1 tablespoon baking powder
- 1⁄2 teaspoon salt
- 1 cup whipping cream
- 1⁄4 cup vegetable oil
- 1⁄4 cup honey
- 2 eggs, slightly beaten
directions
- Heat oven to 400*F.
- grease a 9 inch baking pan, set aside.
- in a bowl mix together, cornmeal, flour, sugar, salt and baking powder, using a wire whisk, give it a couple of swirls to blend the dry ingredients.
- add remaining ingredients and mix until moistened.
- pour into greased pan.
- bake for 20 to 25 minutes, or until a wooden toothpick inserted into center comes out dry.

This was tasty! I thought it was sweet, but I used white cornmeal, which is what I had on hand. After reading another review, I changed the liquid ingredients to 1/4 c. heavy whipping cream and 3/4 c. low-fat buttermilk...I think that helped, as I found it to be moist. This took 24 minutes to bake & was very easy to put together but it really doesn't live up to it's name. I love cornbread & was disappointed that this recipe was as dry as it was. It wasn't as sweet with the sugar & honey as we thought it would be either. We ate it warm from the oven with maple syrup. Thanks for sharing, daisygrl! Made for ZWT 5 - Ali Baba's Babes.Reply
