Honey Glazed Chicken

ingredients
- 1⁄2 cup soy sauce
- 1⁄2 cup honey
- 1 teaspoon garlic powder
- 2 teaspoons dry mustard
- 1 teaspoon grated lemon, rind of
- 2 teaspoons lemon juice
- 1⁄2 teaspoon ground ginger
- 1 (3 lb) chicken, cut up
directions
- Mix all ingredients for glaze, stirring well.
- Grill chicken, skin side down, over medium coals for about 1 hour.
- Turn often.
- Baste with sauce the last 20 minutes of grilling.

I made this with breast's and thigh's. Watch the timing or the breasts will be dry. The glaze is wonderful, with a rich flavor, but not over powering. I used clover honey and I think it added a deep robust flavor. The thighs were just right not dry and no red around the bone. I think I would cut the cooking time on the breasts to 50 minutes and then check for doneness. All in all a wonderful dish and very easy to prepare. We had a salad and boiled red potatoe's with rosemary and butter. A wonderful glaze,with a full taste. I did find that cooking an hour dried out the breasts a bit. I cooked breasts and thighs. The thighs were tender and juicy. This is a real easy one to prepare. I tried the glaze on some beef the following week and it was really flavorful

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!!
I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch.
We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
