Hominy Casserole

"My grandmother used to make this recipe. She got it from a ladies cookbook in Lubbock, Texas. My mom made it, and now I make it. It is a family favorite!"

Ready In:




  • Mix all ingredients except the cheese.
  • Pour into 8 or 9" baking dish.
  • Sprinkle grated cheddar cheese on top.
  • Bake at 350 degrees for 25 minutes or until cheese is thoroughly melted and sides of casserole are bubbling.

  1. This was very tasty. I used hominey for the first time recently in a Chili recipe that I really liked. So, I was looking for more recipes using hominey and I wasn't dissapointed. The only changes were low fat cheese and light sour cream. Thanks for a great recipe!

  1. I was looking for a healthy enchilada bake and found this recipe. Just added shredded chicken, hatch green enchilada sauce and then used low-fat sour cream and cheese. The family loved this. We have never eaten hominy before.
  2. Being a New Englander, I'd never had hominy before. I bought a couple of dinged cans in the bargain bin and needed a way to use them. This was really yummy, it may be my new favorite comfort food. I used a small jalapeno pepper instead of the canned chiles, and added a teaspoon of chipotle powder. I also used one can white hominy and one can yellow (cause that was what I had). All in all, it was a hit.
  3. another recipe that i forgot to review. i HATE!!!! chopping onions so i generally don't put them in recipes. this easy and delicious, creamy with a zing from the green chiles. DH does not like hominy, but scarfs down this recipe. i use shredded 2% mexican blend cheese instead of the cheddar, and low fat sour cream. great recipe!!!!
