Holiday Chicken Salad

- 3 (13 ounce) cans chicken breasts, drained
- 1 1⁄2 cups dried cranberries
- 1 cup mayonnaise or 1 cup yogurt
- 1 cup chopped celery
- 1 cup chopped pecans or 1 cup walnuts
- 1⁄2 minced bell pepper
- 2 sliced green onions
- 1 teaspoon paprika
- pepper
directions
- In a medium bowl, shred the drained chicken.
- Add and mix the mayo or yogurt, paprika, cranberries, celery, bell pepper, onions and nuts.
- Add pepper to taste.
- Serve as a sandwich or with crackers.

Although I do have cans of chicken meat on hand, I also have shredded chicken breast in the freezer, so used that in this quickly made salad! Really loved the inclusion of the dried cranberries, & I toasted the pecans before including them! Also decided to use yogurt this time around & that's definitely a great choice!
