Hillbilly Chili

Delicious hearty chili. Simple to make and adjustable to suit your own tastes. I created this recipe with much trial and error. I love the result, its Y-U-M, Yum! (and if your wondering I call this hillbilly chili because its really popular where I am from, which is Ky)

ingredients
- 1 lb ground beef
- 1 onion (diced)
- 1 green bell pepper (diced)
- 2 tablespoons butter
- 1⁄2 tablespoon salt
- 1⁄2 teaspoon pepper
- 3 (8 ounce) cans tomato sauce
- 4 (16 ounce) cans of busch's chili beans
- 1 (14 1/2 ounce) can diced tomatoes
- 1 (46 ounce) can tomato juice
- 1 bay leaf
- 1⁄2 teaspoon chili powder
- 5 dashes Tabasco sauce (more or less depending on how spicy you like it)
- 1⁄4 teaspoon paprika
- 1 teaspoon Worcestershire sauce
directions
- Cook ground beef until brown in a skillet.
- While beef is cooking sweat the onion, garlic, and green bell pepper in the pot you plan to make the chili inches.
- Drain ground beef.
- Add beef into the pan with the garlic, onion, and green bell pepper.
- Stir until combined.
- Season the mixture with the salt and pepper.
- Cook mixture for 2 minutes.
- Add the tomato sauce, chili beans, diced tomatoes, and tomato juice into the pot.
- Stir until combined.
- Add the bay leaf, chili powder, Tabasco, paprika, and Worcestershire sauce.
- Stir until combined.
- Simmer for one hour, stirring the chili every 15 minutes.
- At the end of the hour taste the chili, add more salt and pepper to taste.
- Serve with cheese and sour cream.
