- 1 1⁄3 cups oat flour
- 4 ounces vanilla whey protein (about 1 cup)
- 1 tablespoon baking powder
- 2 1⁄2 teaspoons apple pie spice
- 1 tablespoon grated orange rind
- 4 eggs or 8 egg whites
- 1 1⁄3 cups unsweetened applesauce
- 5 1⁄3 teaspoons canola oil
- 4 1⁄2 teaspoons agave nectar
- 2 teaspoons vanilla
directions
- Preheat oven to 350. Spray grease muffin tin. Mix dry ingredients in a bowl. Mix wet ingredients in blender. Blend until smooth and scrape down. Add wet to dry, stir just until mixed. Fill muffin cups. Bake 20-24 minutes. Use within 1 week or freeze.
