Herbed Tomato Slices

- 18 slices tomatoes, 1/2 inch thick
- vegetable oil cooking spray
- 6 tablespoons Italian seasoned breadcrumbs
- 1 1⁄2 tablespoons grated parmesan cheese
- 2 teaspoons reduced-calorie margarine, melted
- 1 teaspoon chopped fresh basil
directions
- Arrange tomato slices in a 15 x 10 x 1 inch jelly roll pan coated with cooking spray;, set aside.
- Combine breadcrumbs and remaining ingredients, stir well.
- Sprinkle breadcrumb mixture over tomato slices.
- Bake at 350f degrees for 10 to 12 minutes or until thoroughly heated.

I made this for the DERF Cookaton in August 2007. I can't say that I've ever made baked tomatoes before so this recipe intrigued me. I did 1/2 the recipe as there were only 2 of us for dinner tonight. I used tomatoes fresh from the vine and the topping was very good. The combination of the seasoned breadcrumbs and the fresh basil really complimented the tomato and parmesan cheese. DERF, thank you so much for this great recipe and I hope you are feeling much better soon.

I loved this recipe for the nice combination of the sweetness of the roasted tomatoes and the savory, crumbly topping. Use slightly higher temperatures (200 degrees C/400 F) to make the topping slightly crunchy. If you cannot find Italian seasoned breadcrumbs, just use normal ones mixed with some dried sage, rosemary, and basil.
