Healthy Vegetable, Beef, and Barley Soup

"My husband LOVES homemade soup, so I am always trying new recipes. However, I tend to have a hard time following recipes without adding my own changes! When I was making a beef and barley soup recipe tonight I ended up making several more changes than usual. It turned out SO extra yummy that I decided to make it my own recipe! It might look complicated, but it's actually really easy to make. Also, it should make plenty of leftovers."

  • In a large soup pot over medium heat cook ground meat, onion, and garlic until meat is no longer pink.
  • Add spices and cook for another couple of minutes. (This will smell delicious!)
  • Add all remaining ingredients, turn to high heat and bring to a good rolling boil, then reduce heat and simmer for about an hour. Enjoy!
