Healthy Oatmeal Raisin Cookies With Honey

ingredients
- 1 cup whole wheat flour
- 1 1⁄2 cups rolled oats
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon baking powder
- 1⁄2 teaspoon salt
- 1 tablespoon cinnamon (or more as desired)
- 1⁄2 teaspoon nutmeg (optional)
- 1⁄2 cup honey
- 1⁄2 cup oil (corn, grapeseed or olive)
- 1 tablespoon molasses
- 1 egg (beat with 1 Tbsp Water)
- 1 teaspoon vanilla
- 1⁄2 cup raisins
- 1⁄2 cup walnuts

- 1.In a large bowl, mix all the dry ingredients together.
- 2.In a medium bowl, mix all the wet ingredients together. Hint: when measuring out the honey, spray the measuring cup with oil or baking spray--your honey won't stick).
- 3.Mix the wet stuff with the dry stuff. Add the raisins and walnuts and mix. If the mixture seems too wet, add a bit of flour. If it isn't binding together very well, you may wish to add an egg white.
- 4.COOL the mix for 20 minutes in the fridge.
- 5.Preheat the oven to 335 degrees (lower temperature due to the honey in the recipe which will burn more easily).
- 6.Drop by teaspoonfuls onto your baking sheet (I recommend lining the baking sheet with parchment paper). Press down with a fork to ensure even cooking.
- 7.Bake for about 15 - 20 minutes or until golden on the bottom of the cookie. The cookies freeze very well and make a great snack! Enjoy.

I followed many of the suggestions and they turned out perfectly!! I only make cookies with no cane sugar these days and these are one of the very best recipes I've made. Changes I made - I used butter rather than olive oil because the most current research does show that butter is actually a healthy fat and I find it tastes better in cookies than olive oil. I always use wheat pastry flour in baking because it turns out fabulous results. I did add the nutmeg, used just a little more cinnamon than called for, did add the 2 tbsp of flour which made for a fabulous consistency and used about 3/4 the salt.

These were sooooo good! I can't give it a 5 b/c I didn't follow the recipe exactly. I used 2 heaping table spoons of cinnamon, and I highly recommend adding the nutmeg. I considered what others said about it calling for too much salt, so I used 3/4 of what it called for. The batter tasted salty, but after it was cooked, it was just right. For the oil I used butter b/c that's what I had available. I used white flour instead of whole wheat, and I ended up adding an extra 1/2-3/4 cup of flour to thicken it up. I didn't add walnuts either b/c I made them for a large group of people. I was extatic to find a good cookie recipe that uses honey rather than cane sugar!

I'm giving it five because it is, after all, a no-sugar recipe so you're probably not looking for something super-sweet. I did have to add extra flour to get a decent consistency and I think I added just too much- I would say one cup plus two tablespoons is probably good- more than that and you get pretty bready cookies. I also substituted 2 tbsps honey for the molasses because I don't keep the latter in my pantry. Otherwise made no subs. The cookies turned out great and it's wonderful to have something I can serve to my kids more or less guilt-free. Thank you, 1271525! Almost forgot to say- I did cut the salt in half as per 1351167's recommendation and I'm glad as the taste was spot-on.

This was pretty good for such a healthy cookie. I love that it uses no sugar, white flour or butter. I used olive oil and black walnuts. The walnuts were a bit overpowering. Will use regular walnuts or pecans next time. A bit salty too. Will cut salt in half next time. But overall a great guilt free cookie for cold dreary afternoon.
