Healthy Low-Fat Black Bean Veggie Burgers

ingredients
- 1 1⁄2 - 2 tablespoons pureed onions (I prefer green onions)
- 1 cup black beans, well drained
- 1 -3 tablespoon whole wheat flour
- 1 slice whole wheat bread, very well crumbled
- 1 - 1 1⁄2 teaspoon crushed garlic
- 1⁄2 teaspoon onion powder
- 1⁄4 teaspoon seasoning salt
- salt and pepper
- oil (for frying)
directions
- In a large bowl, mash the beans until almost smooth (or puree with the onions).
- Add onions and the rest of the ingredients, except the oil, adding the flour a tablespoon at a time until the mixture is at your desired consistency.
- Form bean mixture into flat patties and fry patties in a small amount of oil until slightly firm.
- Serve topped with hummus or a Greek feta salad salad dressing, spread on a whole wheat bun. I tried these with the usual ketchup and they weren't nearly as good -- trust me.

So much flavour for so little effort. I put everything except the flour into the food processor and mixed. I found that it held together without the flour so I skipped it altogether. I used Mrs Dash original blend for the seasoning salt. I served these two ways. First as a regular burger with all the topping and second as a wrap. For topping I set out grated carrot, corn, feta cheese, Thai sweet chili sauce green onion and tomatoes. I used my ice cream scoop to measure so they were on the smaller size, but perfect for the wraps. My kids even loved these. Thanks for the recipe.

Wow, I am impressed with these! First off, they take NO time to prepare; in fact I had them done early enough to refrigerate for a while whilst I worked on side dishes (I think this aided the frying process!). I used one whole can of beans and doubled everything else to make 5 patties. I realized I was out of onion powder, so I just used a few shakes of onion salt and decreased the season salt a bit. I didn't actually measure the spices, just tasted as I went. Even toddler DS went to town on his, as long as I covered it in ketchup LOL. For myself, I discovered that these go from "good" to "absolutely delicious" by adding barbecue sauce and a few slices of avocado to the sandwich! I'm sure Greek toppings would be yummy, too, but I've got to highly recommend that avocado! Made for Healthy Choices ABC tag.
