- 3⁄4 cup whole wheat flour
- 3⁄4 cup all-purpose flour
- 1 cup oats
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1⁄2 teaspoon salt (kosher)
- 1⁄8 cup flax seed, ground
- 1 egg
- 1⁄2 cup milk
- 1⁄4 cup honey
- 1⁄4 cup maple syrup
- 1⁄3 cup vegetable oil
- 2⁄3 cup mashed banana (about 2 small bananas)
directions
- Preheat oven to 350°F.
- In a small bowl, mix flours, baking powder, baking soda, salt and ground flaxseeds. Set aside.
- In a large bowl, mix: egg, oil, oats and honey and/or maple syrup.
- Gradually add the flour to the egg mixture, alternating with the milk.
- Add the mashed bananas.
- Pour into greased muffin tin. Bake for 20 minutes (let stand 2 minutes).
