As the title says, this is a colorful, delicious health salad. I've never had any type of apple in my salad before. A granny smith apple, is the perfect addition for this salad and I think for any lettuce salad you would make. From now on any lettuce salad I make a granny apple is going into it. This is just a wonderful salad!! So fresh and light with a great balance of textures. I don't care for onions so left them out. The apple goes so well with the other veggies; drizzled just a little poppy seed dressing on this and loved it - thanks for sharing the recipe! Made for Fall Pick-A-Chef 2011Reply

Made this pretty much as given, & thoroughly enjoyed it with just a very slight sprinkling of an orange citrus dressing that I like! Across the table, however, my other half literally soaked his salad with a creamier dressing! Enjoyed by both of us, but mine, I'm sure, was healthier by far!
