- 2 cups flour
- 2 cups sugar
- 2 eggs
- 2 teaspoons baking soda
- 1 (20 ounce) can crushed pineapple in juice
- 1 cup coconut
- 1 teaspoon cinnamon
- 1 cup chopped nuts (pecans or walnuts)
- 1 (8 ounce) package cream cheese
- 1⁄2 cup butter
- 2 teaspoons vanilla
- 2 cups powdered sugar

Cake:
- Using a hand mixer, mix all cake ingredients: flour, sugar, eggs, baking soda, crushed pineapple with juice, coconut, chopped nuts, and cinnamon together well.
- Spray a 13x9 inch pan with nonstick spray.
- Pour cake batter into sprayed pan.
- Bake at 350 degrees (F) for 35-40 minutes. Time may vary so check cake and remove from oven when it looks done.

- Mix all icing ingredients: cream cheese, butter, vanilla, and powdered sugar until smooth.
- Spread icing on cake after the cake has cooled.
