ingredients

  • 1 lb meatballs (20-25 1-inch, use your favorite recipe or use frozen if you must)
  • 15 ounces pineapple chunks (fresh is always better, however canned works well)
  • 2 bell peppers, cut into 1-inch pieces (green, yellow, red and or or orange)
  • 12 cup brown sugar
  • 14 cup vinegar (I use apple cider)
  • toothpick

  • Cook the meatballs.
  • In microwave or on stove top cook the peppers until just tender.
  • Place pepper, meatball and then pineapple on a toothpick.
  • Mix brown sugar and vinegar until thoroughly mixes.
  • Arrange on platter or on small tasting plates.
  • Drizzle a little sauce over the top of each.
