Hawaiian-Style Banana Bread

ingredients
- 1 cup sugar
- 1⁄2 cup shortening
- 2 eggs
- 1 teaspoon vanilla
- 1 cup ripe banana
- 2 cups flour
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon baking powder
- 1⁄4 teaspoon nutmeg
- 1⁄4 teaspoon cinnamon
- 1 cup chopped nuts
directions
- Heat Oven to 350.
- Cream sugar and shortening.
- Add eggs and Vanilla and beat until fluffy.
- Add baking soda, baking powder, nutmeg and cinnamon and mix at low spead.
- Stir in flour and nuts (or add at low speed if you are using a mixer).
- Pour batter into a greased 9" by 5" loaf pan.
- Bake at 350 for 45 minutes.
- If loaf is browning too fast, cover top with a layer of foil.
- Cool in pan for 10 minutes.

A delicious banana bread! I used butter instead of shortening and increased the spices to 1/2 teaspoon each, added pinch of salt too. I did not have any nuts, so added 1/2 cup of coconut in keeping with the Hawaiian-style! I baked my loaf for an hour. This was very good, DH loved it and he tends to be fussy!!
