Hawaiian Chicky for the Crockpot

ingredients
- 3 chicken breasts (I get the flash frozen ones so I can only cook what I need)
- 1 cup diced pineapple (for a more thick sauce, drain the fruit, but I usually use the juice becauce it really adds a sweet )
- 2 cups frozen sliced red and green peppers (Again, I get the frozen bags and use only the amount needed BUT fresh is fine too)
- 1⁄2 cup frozen chopped onion, however fresh is fine
- 2 cups of smokey style honey barbecue sauce
- 3 tablespoons honey
- 1 pinch salt and pepper
- 1 pinch of minced garlic
directions
- Put all the ingredients in the crockpot and set on either low for 8 hours or on high for about 4 or 5 hours-Or as long as it takes for the chicken to be totally cooked. Once the chicken is cooked, serve over a bed of brown rice, with the sauce, veggies and fruit along side!

Unfortunately turned out inedible due to dryness, cooked on a low setting, covered, for about 8 or so hours. Used plenty of BBQ sauce, honey, pineapple & juice etc. Perhaps the chicken breasts were too small - I recommend you use the largest you can find and keep the cooking time as short as possible.

I threw this in the crock pot before I left the house today and when I got home--the whole house smelled wonderful! I cooked it for about 4 hours on high then turned down to low for about another hour and a half. The chicken absorbs the sauce and flavors really well. I think next time I will use more pineapple.

This recipe I had high expectations, but when I made it I found it to be just okay. The chicken was dried out, while cooking it under the time suggested here on a low setting and the sauce was too bbq-y so i added more and more pineapple juice just to balance out the flavor. added portabella mushrooms and the end result..still just okay. not something I'll try again with my picky dad.

I love to cook. It's just my hubby and I for now, so I love recipes for 2, or that can make a good take to work lunch for the next day :)
