Happy Lean Turkey Meatloaf

"My husband and I have been trying to eat healthy during the last year or so and substituting beef for turkey almost every chance we get. I was mixing ingredients together to come up with this recipe one night and it has stuck with us."

  • Mix together the turkey, onion, salsa, egg substitute, 1/4 cup of the Bread Crumbs, 1/4 cup of the cheese, Parsley, Salt and Pepper.
  • Shape into a loaf shape or place into a loaf pan. Top with the loaf with the tomato slices and the remaining bread crumbs and cheese.
  • Bake at 350 for about 40 minutes, or until cooked to 160 degrees internally. You may want to cover the top with foil if it becomes too brown.
