  • Brown meat and onions.
  • Drain well.
  • Combine all ingredients in a large pot.
  • Cook at least 2 hours or use a crockpot and cook up to 8 hours.
  • Remove bay leaf before serving.
  • This soup freezes well.

    I added a bit more water but next time I'll put more barley in it.I added a bit of liquid smoke.

    Excellent soup that pleases everyone and it freezes well for meals later in the week when time ia a premium. Note: I had to add much more ( x 3) beef broth during the long cooking time. It's definetly a keeper!!

    I didn't think the soup had alot of flavor. Instead of the pearl barley, I put in 1 cup of uncooked small pasta called ditalini. The crockpot did a nice job of cooking the soup. I served it with grated parmesan cheese on top to give it a flavor boost.
