Ham & Cheese Casserole

"I wanted to make something "different" and easy for dinner. I had ham in the freezer & cheddar cheese. I did not have any canned soups for casseroles so made up my own sauce. My husband, who is not a big casserole fan, loved it!"

  • Cook Farfalle in boiling salted water until al dente.
  • Saute celery& onion in butter until soft.
  • Add flour, dry mustard, and salt and pepper to taste.
  • Add broth and Half& Half or evaporated milk all at once.
  • Cook and stir over medium heat until thickened.
  • Combine sauce, ham, cheese, bell pepper, and noodles and place in large greased casserole dish.
  • Combine topping ingredients and sprinkle over top of casserole.
  • If desired you can grate parmesan or asiago cheese over the top.
  • Bake in 350 degree oven until bubbly and topping is slightly browned, approximately 20-30 minutes.

Hi! I live in Edmonds, WA, just a few miles N of Seattle. I am a nursing administrator in a skilled nursing center and love it! What do I like to do for fun? Spend time with my family. It doesn't matter what we do. As far as a favorite cookbook, I have many. My husband jokes about all the cookbooks I have. There are 2 that are my mainstays though, Good Housekeeping and The Joys of Cooking. I recieved these 33 years ago for wedding gifts and rely on them a lot. My biggest passion is playing with my 18 month old grandson. What a joy! What would I do if I had a month off? Hmmmm I'll have to think about that one.
