- 1 cup ricotta cheese or 1 cup cottage cheese
- 1 cup mozzarella cheese
- 1 1⁄3 cups parmesan cheese
- 1 -28 ounce spaghetti sauce
- tomato paste
- 1 -2 garlic clove, minced
- 1⁄3 cup chopped onion
- 1⁄3 lb ham, chopped
- 1⁄3 lb pepperoni, chopped
- salt and pepper
- 1 (8 ounce) box manicotti
- 2 tablespoons olive oil
directions
- In a pan, brown onion and garlic set aside. In a large bowl mix all cheese, ham and pepperoni and set aside.
- Boil manicotti for 6 minutes; drain and let cool! Mix tomato paste and tomatoes, salt and pepper; simmer 15-20 minutes.
- After the manicotti is cool, stuff each one. Put some sauce in the bottom of a 13x9 inch pan, add stuffed manicotti cover with suace and bake at 350 for 20 minutes.

This sounded good, but the end results were disappointing. I made it as specified, because I feel I should review the recipe "as posted". But I knew when I mixed the cheese stuffing mix that it was way too dry. With tweaking, this could be good. But as posted, it just doesn't quite meet expectations. Made for Zaar Cookbook Tag.
