ingredients

  • 2 tablespoons butter
  • 1 medium onion, chopped
  • 14 green pepper, chopped
  • 1 (10 3/4 ounce) can cream of mushroom soup
  • 1 cup sour cream
  • 14 cup milk
  • salt and pepper
  • 1 12 cups grated mozzarella cheese
  • 3 cups diced cooked ham (work really well) or 3 cups cooked ham steaks (work really well)
  • 4 ounces wide or dumpling egg noodles, cooked and drained, *3 cups uncooked
  • 2 cups potato chips (crushed)

directions

  • Saute butter, onion and peppers.
  • Mix soup, sour cream, milk, salt and pepper, cheese, ham and noodles.
  • Mix ingredients together, pour into greased 13x9 pan or casserole dish.
  • Put crushed potato chips on top.
  • Bake at 350 until well heated and bubbling, about 35-40 minutes.
  • *4 ounces medium noodles = 3 cups uncooked/dry noodles, and yields about 4 cups when cooked and drained.

    I made this tonight for my family but changed up a couple of things. Used Penne Rigate instead of Egg Noodles, a little less sour cream (I ran out) and I also omitted the potato chips.... changed the cheese to cheddar and added some seasonings, but a fantastic base for a Wonderful meal. Thanks for a great recipe!

    I made this for my family the other night. Thought it went together easily and quickly. I didn't add any additional salt because I figured the ham would add enough salt to the dish. My husband really liked it, I thought it was good too but just a little bland and I thought that maybe it needed a little more seasoning for my tastes. Thank you! (tagged for Think Pink '09)

    Absolutely delicious! I just made this for dinner tonight and used up our leftover Easter ham. I used cheddar instead of mozzarella cheese though Im sure the mozzarealla is just as tasty. I think that some might find it a tad salty and I would suggest the low sodium soup as well for those who dont like a lot of salt. I could eat the whole pan myself! Will definitely make this a lot. Thanks for the great recipe!

    My husband and I enjoyed this casserole, and it was easy to make. I added some sliced mushrooms to the saute, and used panko bread crumbs and a little butter on top (no potato chips on hand). It's very salty thus I'd recommend using low sodium soup. Also, it didn't quite fill my 13 X 9" in pan, but maybe that's because I used about 12 oz of ham-- not sure if that equals 3 cups or not!     My family really liked this and the only reason that I'm giving it 4 stars is because I found it to be fairly salty. I will make again except with low sodium soup which I think attributed to the saltiness. When I went to make, I didn't have cream of mushroom soup and used cream of chicken and it was still tasty. Really creamy and cheesey, which my family enjoyed and a great way to use leftover ham which we had from the night before! Also, I didn't have egg noodles and used fetticene instead which seemed to work well.

    This was ok . . . my kids didn't really care for it. It was easy to put together. I also used more than 4 oz of noodles & actually used penne instead of egg noodles.
