Ham and Cheddar Macaroni Salad

ingredients
- 1⁄2 lb boiled ham (thick sliced) or 1/2 lb baked ham (thick sliced)
- 1⁄2 cup cheddar cheese, diced
- 2 cups cooked elbow macaroni (I cook it al dente)
- 1 cup chopped celery
- 1 small onion, chopped
- 1⁄2 cup dill pickle, chopped
- 1⁄4 cup mayonnaise
- 1⁄4 cup Miracle Whip
- 2 teaspoons prepared mustard
- salt and pepper
directions
- Dice ham into 1/2-inch cubes.
- Combine ham and cheese with macaroni, celery, onion and pickle.
- Mix mayonnaise and mustard,Salt and pepper to taste.
- Then stir into macaroni mixture, mixing well.
- Chill well until ready to serve, several hours for maximum flavor.

I love mac salads and this is almost the same as mine, I exclude the celery. We made all the food for our picnic style wedding and this was on the menu. I don't like all mayo salad recipes, I like the tang of Miracle Whip so I add a little extra. Sometimes I add sweet pickle relish instead of dill pickles if I don't have them on hand, which is rare. Very yummy.

What a wonderful salad Little Bee! I made this today and doubled the recipe to give some to my DS. I used small shell pasta in place of the elbow macaroni, and added in two firm chopped Roma tomatoes. The dressing is delicious, and I loved the pickles added in to the salad. This is definately a repeater, thanks for sharing hon!...Kittencal:)

I am happily married to my best friend and we just bought our first house! No kids but we have 2 little dogs that we think the world of. I was born in California and although I have been on the East Coast for most of my life I am still displaced! I love the beach and hate the cold! In our free time we love to go to the beach or the mountains and hike or intertube down the lazy Shenendoah River. It is so beautiful there! I have loved to cook all of my life and will read cookbooks like they are novels!
