Halibut With Lime and Tequila

- 3⁄4 lb halibut steaks
- 1⁄3 cup freshly squeezed lime juice
- 3 tablespoons tequila
- 2 teaspoons olive oil
- 1 tablespoon chopped cilantro
- 2 cloves garlic, minced
- 2 teaspoons brown sugar
- 1 teaspoon freshly grated lime rind
- 1⁄4 teaspoon Pickapeppa Sauce
- salt and pepper
directions
- Mix marinade ingredients (all except fish) in a plastic container large enough to hold fish in a single layer.
- Add halibut and turn over.
- Cover and refrigerate for 30 minutes, turning at least once.
- Remove fish from marinade and pour marinade into a small saucepan.
- Bring to a boil, reduce heat to simmer, and cook for 5 minutes, stirring often.
- Remove from heat.
- Grill halibut over medium-hot coals for about 4 minutes per side, or until fish is done in the center.
- Serve marinade sauce over fish.

I love to cook, and for the last several years I have been preparing "light" foods almost exclusively. It really was a lifestyle change at first, and both my husband and I have seen definite benefits to this. I enjoy the challenge of taking "un-light" recipes and making them healthy.
