ingredients
- 1 cup Bisquick
- 4 eggs
- 2 cups thinly sliced zucchini
- 1 thinly sliced onion
- 1⁄2 cup grated parmesan cheese
- 1⁄2 cup vegetable oil
- 1 teaspoon salt
- 1⁄2 teaspoon fresh ground black pepper
directions
- Mix all ingredients well.
- Let stand (at room temperature) for 10-15 minutes.
- Pour into pie pan.
- Bake at 350 degrees for 20-25 minutes, or until golden brown.

I selected this recipe for a dish that I could prepare in advance of a potluck gathering. It was a perfect choice. When I went to retrieve my dish from the table, two teenage girls where scaping crusted bits from the bottom of the dish, and eating them. That's all there was left. It really was a hit !! Use ORGANIC eggs from free ranging chickens if you can. These eggs slightly beaten , produce superior results in high fluffy omelets, and quiches with firmer substance. I let this dish stay in the oven until it was a GOLDEN, and TOASTY vision ! I cooked the dish 30 minutes, and I used a glass pie plate to maximize its crustiness. During the last ten minutes of oven time, I opened the oven every 2 or 3 minutes, and ever so gently, I slightly turned, the pie plate. USE LONG OVEN MITTS FOR THIS !! If you use this method, you will be rewarded with a delightfully browned top. After cooling, I covered the top of the dish with a sheet of heavy paper napkin, a sheet of wax paper, and then wrapped it with a sheet of foil to put it in the fridge. The napkin keeps condensation from ruining the top of the quiche in the fridge. Check the napkin for moisture, and replace it as necessary. Always bring the quiche to room temperature before serving. What a savory combination of tasty ingredients ! However, this dish is best served the day after it has been prepared. Eating it right out of the oven just doesn't compare to the lovely piquance that develops from letting the onion, zucchini & parmagiana blend for a day. This is a also great dish for Spring and Fall picnic hampers. After refrigeration, the quiche slices hold together well, and they can be held with a napkin while being munched upon at fresh air outings. Don't forget the olives, and crusty rolls for the hamper ! (This is not summer hamper food !!Egg dishes don't hold up well in the heat. )

I picked this recipe for the One Hit Wonders Game and I'm so glad I did! This was so easy to put together and wonderful to eat. I cooked it 25 minutes and it still hadn't browned, so I turned on the broiler for about 5 mins. and it got a nice toasty brown on top. I found at the last minute I didn't have Parmesan cheese, so I subbed Monterey Jack and can't wait to try it with Parmesan!Thanks RGirl!
